A premium Japanese omakase restaurant in Paris is looking for a skilled and passionate Sushi Chef (Itamae) to join its team.
The restaurant focuses on traditional Japanese techniques, seasonal seafood, and a high-end omakase experience.
Responsibilities
- Prepare sushi, sashimi, nigiri, and omakase courses to the highest standards.
- Handle and prepare fish with precision and respect for traditional Japanese methods.
- Maintain exceptional quality, consistency, and presentation.
- Contribute to seasonal menu development and daily specials.
- Ensure compliance with hygiene and food safety standards.
Requirements
- Japanese sushi training or significant experience in authentic Japanese sushi restaurants.
- Experience in omakase, Edomae sushi, or fine dining Japanese cuisine.
- Excellent knife skills and fish preparation techniques.
- Strong attention to detail and commitment to quality.
- Professional attitude and team spirit.
